Batata Vada Recipe Ingredients:
For the stuffing:
- 4 medium-sized boiled potatoes
- Salt to taste
- 2 green chilies
- 1-inch ginger
- 4-5 garlic cloves
- 4-5 tablespoons chopped coriander
- 1/2 teaspoon cumin powder
- Few drops of lemon juice

- 1 cup chickpea flour/besan

- Less than 1/4 teaspoon hing
- 1/4 teaspoon baking soda
- 1/4 teaspoon turmeric powder
- 1 teaspoon chili powder
For the tadka:
- 1 tablespoon Puvi Cold Pressed Mustard Oil
- 1 teaspoon mustard seeds
- 1/4 teaspoon asafoetida
- 1/4 teaspoon turmeric powder
And Puvi Cold Pressed Mustard Oil for frying the vadas.
Preparation of Aloo Vada:
Stuffing:
- Grind green chilies, ginger, and garlic to a paste.
- Mash the boiled potatoes and add the green chili, ginger, and garlic paste, chopped coriander, cumin powder, and salt.
- Heat 1 tablespoon of Puvi Cold Pressed Mustard Oil in a deep pan. Add mustard seeds and let them crackle. Then add turmeric and asafoetida.
- Add the potato mixture and stir well until everything is combined and cooked.
- Remove from the heat, add lemon juice, mix well, and let it cool.
- Shape the mixture into balls and set them aside.
Vada:
- In a bowl, mix besan, hing powder, baking soda, turmeric powder, chili powder, and salt. Gradually add water to make a batter of medium consistency.
- Heat Puvi Cold Pressed Mustard Oil in a pan.
- Dip the mashed potato balls into the batter and fry them in the hot oil.
- Fry the vadas over medium heat until they turn golden brown and are thoroughly cooked.
- Remove excess oil using a tissue and serve.
