Crispy Corn Masala

INGREDIENTS:
FOR BOILING (only if corns are hard):
• 4 cup water• 2 cup sweet corn

FOR FRYING:
• ¼ cup corn flour
• ¼ cup rice flour
• 1 tbsp maida / plain flour
• 1 Egg (optional)
• ¼ tsp pepper powder
• ¼ tsp salt
• Puvi Groundnut oil, for frying

FOR MASALA:
• ½ tsp red chilli powder
• ¼ tsp cumin powder
• ½ tsp Chat Masala
• salt as per taste
• 1 tbsp spring onion, finely chopped
• 1 tbsp coriander, finely chopped
• Lemon, as per taste

PREPARATION:
• If the corn is hard then, boil 4 cup water with 1 tsp salt & add 2 cup sweet corn   and boil for a minute.
• Drain off the sweet corn to remove excess water. 
• Add cornflour, rice flour, Maida, pepper powder and salt to the boiled corn.
 • Add Egg if you want.
• Mix well making sure the flour is coated well with sweet corn. 
• Deep fry in hot Puvi Groundnut oil in batches.
• Make sure to keep the flame on medium. (Cover the frying pan with a mesh as the corns splatter while frying, which may burn your skin).
• Stir occasionally and fry until the corn turns golden brown. 
• Strain from the oil & transfer the fried corn into a large bowl.• When all corn is fried, add ½ tsp chilli powder, ¼ tsp cumin powder, ½ tsp Chat   Masala and salt to taste. 
• Mix well making sure the spices are well combined. 
• While serving, add spring onion, coriander and lemon juice as per taste. 
• Toss everything well & enjoy your Crispy Corn.
