Schezwan Sauce Recipe Ingredients:

  • 2 cups dried red chillies
  • ¼ cup Puvi Cold Pressed Sesame Oil
  • ¼ cup finely chopped garlic
  • 2 tbsp finely chopped ginger
  • ¼ cup water
  • 2 tbsp white vinegar
  • 2 tbsp soy sauce
  • 1 tbsp sugar
  • Salt to taste

Preparation of Schezwan Chutney:

  1. Soak the dried red chillies in hot water for 30 minutes or until they become soft.
  2. Discard the water and blend the chillies to a smooth paste, adding water if needed. Set aside.
  3. Heat ¼ cup of Puvi Cold Pressed Sesame Oil in a pan.
  4. Add the finely chopped garlic (¼ cup) and ginger (2 tbsp), and sauté for a minute.
  5. Add the red chilli paste and sauté for 2 minutes, ensuring that the chilli is well cooked.
  6. Pour in ¼ cup of water and adjust the consistency.
  7. Cover and simmer for 15 minutes.
  8. Cook the sauce until the oil separates.
  9. Add 2 tbsp vinegar, 2 tbsp soy sauce, 1 tbsp sugar, and salt to taste.
  10. Mix well, ensuring all the ingredients are well combined.
  11. Serve the Schezwan sauce as a dip with chips or fries, or use it to make Schezwan noodles.
