Lauki Kofta Curry Recipe Ingredients:
For Lauki Kofta:
- 1 ½ cups grated Lauki (bottle gourd or dudhi)
- ⅓ cup Besan (gram flour)
- ½ tsp Cumin powder
- ½ tsp Red chili powder
- 1 Green chili, finely chopped
- ½ tsp Ginger paste or freshly grated or crushed
- ⅓ cup finely chopped Cilantro or coriander leaves
- Salt to taste
- PUVI Cold Pressed Mustard Oil for deep frying
To grind into a paste:
- 1 medium Onion, roughly chopped
- 2 medium Tomatoes, roughly chopped
- ½ inch Ginger, chopped
- 1 Green chili
- 2 cloves Garlic
For Gravy:
- 2 tbsp PUVI Cold Pressed Mustrad Oil
- 4 Cloves
- 2 Green cardamoms
- 1-inch Cinnamon stick
- 1 Bay leaf
- 1 tsp Red chili powder
- ¼ tsp Turmeric powder
- 1 tsp Coriander powder
- ½ tsp Cumin powder
- Salt to taste
- ⅓ cup Plain yogurt (dahi or curd), whisked
- 1 ½ tsp Kasoori methi (Dried fenugreek leaves), lightly crushed
- ½ tsp Garam masala
Preparation of Lauki Kofta Curry:
Making Lauki Kofta:
- Wash the bottle gourd, peel it, and grate it using a box grater. Measure 1 ½ cups of grated lauki. Squeeze out the water from the grated lauki, but keep the lauki water aside for the gravy.
- In a bowl, combine the squeezed lauki and the rest of the kofta ingredients. Mix well to form a sticky dough. Adjust the quantity of besan as needed.
- Heat PUVI Cold Pressed Mustard Oil in a kadai or deep pan for frying.
- Grease your hands with oil and shape small portions of the mixture into round balls.
